Taco Soup


Mmmmm… what’s better to warm up on a harsh, cold winter day than a big pot of soup?  Nothing.  Here in the South, we’ve yet to see one of those days… but I still couldn’t resist the soup.

Taco Soup!!  This one is so quick and easy and foolproof.  Not to mention YUMMY!!  I usually use all store bought products for this one.  But since the budget is tight and the grandparents were generous enough to pass along some home-canned goods, I thought I’d use as much from my pantry as I could.  I think it turned out even better!

Thanks to Grandma for canned tomatoes, corn, and some of the best salsa I’ve ever had.  Seriously still trying to get that recipe out of her  ;)

I wasn’t kidding about the supper easy part.  Add this:



(I crushed up those whole canned tomatoes using a potato masher.  You could just buy a can of crushed tomatoes from the store).  And this:



And add some browned beef and onions:



(Mine is actually deer burger – again, trying to use what I already had!).  Put it in the crockpot on low for a few hours and WOW!!!



Serve with just cheese (aka the wife way):



Or with sour cream (aka the hubs way):



Delish!!!  And please, do me a favor – try this one.  Even if you don’t like beans.  I swear.  I hhha-ate beans!  But these taste so different when they’ve been simmering with all the seasonings.  The texture is even good!  :)

Also, this doesn’t have to be done in a crockpot.  You can just cook it on the stove until everything is heated.  I chose to use the crockpot because after a long day out shoveling snow (or in our case … mowing the lawn?  In winter??) who wouldn’t want to walk in and smell/see this?

Taco Soup
1
pound ground beef
1
chopped onion
1
can pinto/kidney beans
1
can northern beans
1
can corn
½
jar Taco sauce/salsa
1
package taco seasoning
1
can Rotel tomatoes
1
large can crushed tomatoes
1
package Ranch dressing

tortilla chips

sour cream

shredded cheese

Brown meat and onion. Drain grease. Add canned ingredients, taco seasoning, and ranch dressing seasoning. Heat and simmer to blend flavors. Serve over tortilla chips with sour cream and cheese to garnish.

  1. This sounds and looks yummy. I will have to wait a bit to try it though, we've had a lot of Mexican lately - one might think we live in Mexico. I've been told to switch up the menu a bit. :) Of course it will have to wait until after nachos for the super bowl.
